I had a tin of Canadian Maple Syrup and a bag oats and seeing as I was craving something sweet, I decided to throw them together to make these delicious maple and oat cookies.
This is a somewhat delayed post due to having a stressful night of having a leaky washing machine and the shop downstairs/my flat fire alarm going off to cut a long story short!
I adapted this recipe from an American website as I really fancied something sweet and oaty that wasn’t simply just a bowl of porridge. Seeing as I had real Canadian Maple Syrup in the cupboard, I thought why not make something with Maple and oats? These are really easy to make just to give you that sweet fix and are really filling too!
You will need:
- 200g oats
- 150g flour
- 1tsp cinnamon
- 1tsp nutmeg
- Pinch of salt
- 75g butter
- 200g maple syrup
- Optional sugar, nuts, chocolate
Start by preheating the oven to 180C and have a reasonably large mixing bowl ready. Pour in the oats, flour, cinnamon, nutmeg and salt into a bowl and mix it together. I did use Christmas Spice instead of Nutmeg as I didn’t have any.
Optional: You could also add in nuts, raisins, chocolate or anything else that takes your fancy. I was going to add walnuts until I realised they looked a bit passed their best… Ooops!
Make sure the butter is at room temperature and have smaller mixing bowl ready. Pour the maple syrup (I have real Canadian Maple Syrup in my cupboard which I used but you can just use the syrup you can buy from the shop. If you live in the UK like me, Canadian Maple Syrup is a bit hard to come by or a very expensive flight to Canada!) and butter in to the bowl, ensuring that it is stirred in together well.
Pour the butter/syrup in to the other mixing bowl and mix all together to create a dough like mixture.
Place some grease proof paper on an oven tray and then pour the mixture on to it. As you can see, I did attempt making biscuits but I didn’t really have enough mixture (Definitely didn’t lick the spoon too many times when mixing it…) so I just spooned all the mixture on to the tray and levelled it all out.
Once this is complete, place in the oven and bake for 20-25 minutes or until golden brown. Take out of the oven and leave to cool slightly. Cut or break in to pieces and enjoy!
I broke them in to bite size cookies, Greg and I enjoyed them so much that we ate them in like a day. If you want to see the original recipe, click here.
